thanks for all of your well wishes last night! 🙂 it’s definitely surreal being in our apartment together for good! i don’t think it’s hit me yet…
our apartment is coming together. we’re still working on finding homes for lots of brad’s stuff and there are still 2 loads of laundry waiting to be washed…. hopefully brad can finish a couple of those things tomorrow!

the first dinner
tonight was the first night brad and i made dinner together in the apartment (last night we went out to dinner because it was easter, we were tired, and we didn’t have any food in the refrigerator!).
as soon as i saw this recipe for mexican mac & cheese cups on jessica’s blog, i knew i had to make them!
we didn’t change much from the recipe, but we made a couple switches! jessica called for red and green peppers, but green are so much more affordable, so i used all green!
also, we added some black beans to the recipe because it sounded absolutely perfect! it was a pretty good decision if i do say so myself!
and i think my favorite part about this meal was my awesome new fiestaware ramekins!
aren’t they pretty? brad’s mom got these for us while we were in st. louis. 🙂 she was having a hard time finding them in our hometown, so when we saw them at dillards in st. louis she had to grab them!
oh, and the fiesta mac & cheese = bomb.

let’s see how i did on last week’s mini goals!
♥ don’t go overboard on food this weekend. it’s brad’s graduation weekend and i know there will be an abundance of eating out and drinks. it’s my goal to enjoy myself, but never feel stuffed. let’s see if i can do it! ← fail. oh man…i think i gained 5 lbs and stretched out my stomach to twice its size this weekend!
♥ complete week 5 of the pipes challenge. ← sadly, not so good on this one either. i dropped the ball this week.
♥ go to the gym 2 times this week. ← wow, apparently i forgot about my goals this week. i went once – last monday.
♥ savor the moments. brad’s graduation and his move to madison is something that i have been anticipating for the entire 31 months that we have been dating long-distance. i just want to enjoy this time and relish in the fact that it’s finally here! ← at least i did this one! it was a great weekend!

this week’s goals are gonna be pretty simple!
◊ complete the final week (week 6) of the pipes challenge.
◊ stick to the meal plan. i planned out meals for the week & went shopping so hopefully this one shouldn’t be too hard!
◊ go to the gym twice this week. second try’s the charm?
◊ finish manuscript draft revisions at work

Sometimes we just have those weeks/weekends and need to take in the moment and let the goals slide. Celebrate life! And then you can pick up this week and get back on track. 🙂

Also, those mini fiesta ware ramekins are adorable! My mother-in-law collects Fiesta ware and I think that might have to be our next gift to her (with maybe some for ourselves!)

I saw due date and thought it was pretty funny although it was not my favorite. I think the hangover was much funnier and I like Robert Downey Jr. as Sherlock Holmes or Tony Stark much better! I think you took care of the most important goal of last week!
i liked the hangover way more too. i thought due date had some funny parts, but was not nearly as hilarious as it was portrayed.
