getting nutty

i had a crazy busy kitchen day yesterday!

(i love when that happens…. Smile )

first, i made two kinds of nut butters: cake batter cashew butter and cinnamon almond butter.

the cashew butter is nothing new – i make it all the time! but this was my first time trying a new secret ingredient for my almond butter.

trader joe’s cinnamon almonds! as soon as i saw these last weekend, i knew they’d be perfect for making almond butter. and easier than adding in a bunch of mix-ins. this batch just had 1 cup plain almonds and 1 cup cinnamon almonds! so easy and so delicious!

in fact, both butters were so tasty, i couldn’t decide which to put on top of my oats…

so i had a bit of both!

after my nut butter making extravaganza, i bottled two batches of kombucha (12 bottles!) and got another two started.

then, for dinner, i whipped up mama pea’s tempeh tamale pie again!

i bought tempeh at trader joe’s again a while ago, and i knew i should really use it. i thought about being adventurous and trying a new way to eat tempeh, but brad and i both really liked this meal last time, so i went for it again!

i served it with slice black olives, a bit of plain yogurt (no sour cream…), and some guacamole! i got a coupon for $2 off any wholly guacamole product, and it was $2.99 at my supermarket yesterday so i got the guac for only $.99! Smile

my friend katie is coming to visit tomorrow night, so after work today i’m going to get my butt busy cleaning our apartment! i borrowed my mom’s carpet shampoo-er last weekend, so i might even try to shampoo our carpets. not sure what to do with the dogs while i do that though…. hmmmm.

i’m also going to hit the gym after work! i’ve been doing really good about getting in at least some kind of workout every day lately. the workouts have pretty much been only cardio, but after i get another week of consistent workouts in, i’ll increase my gym time and add some strength training! i don’t want to jump back in to working out too quickly and then burn out like i have in the past. instead i’m really working on easing my way back in.

i am obsessed with that cake batter cashew butter! i also love pb&co dark chocolate dreams and nutella!

    That cinnamon almond butter sounds absolutely amazing!! 🙂 I have been loving the sunflower seed butter! Mmmm! But i never thought about trying to make my own. Such a good idea!

    What equipment do you use to make the nut butter? Your food processor? I really should do that for myself, but I’m afraid of killing our food processor/blender.
