wow! i think yesterday was the first day in several months that i didn’t blog at all. crazy.
but i’m back today with my favorite series that i still had to do this week even though it is in fact, monday – not sunday. boo.
1. brad and i hosted game night on saturday night! it was a blast! we had lots of snacks and treats.
i got an urge to bake a bit saturday afternoon, so i whipped up these pumpkin muffins with cream cheese frosting!
and you can’t forget the festive sprinkles…
these were so delicious! brad said they tasted like healthy pumpkin muffins with unhealthy cream cheese frosting and that basically the frosting saved the muffins. hah!
one of my best friends from college and i used to bake cupcakes or cake all the time and then decorate it with cream cheese frosting and sprinkles, and then bring the treats to all of the boys on our floor. making these reminded me of that!
2. speaking of game night… i had way too much of this.
ugh, i can hardly look at that picture, it still makes me feel a little off. yesterday was a rough one. i need to learn how to stop drinking wine when i’m having fun! it was seriously going down like water…
3. i’m hooked on a new breakfast lately.
plain yogurt with a scoop of jam, nut butter, granola, chia seeds, and a splash of almond milk. it is so refreshing and it tastes like dessert! i love it.
4. i switched over to the new gmail early.
i love it! i’m still getting used to a couple things, but i think it looks so much cleaner and it really is intuitive to use!
5. my friend katie started a blog! remember katie? she was one of my bridesmaids!
and i was a bridesmaid in her wedding in 2008!
katie and i met in middle school and were pretty much instant bff’s. i’m so excited that she’s finally starting her own blog! it’s called headfirst into health and it’s about all the nutrition/food things she’s learning at school (she in her 3rd year in a dietetic program at the university of wisconsin – green bay. everyone should stop by & encourage her to add a new post!
6. this was my breakfast of champions yesterday.
an egg, two big pickles cut up, some cheese, and crackers. along with some excedrine, a multi-vitamin, and lots of water…
7. want to know what you do when a recipe calls for diced green chiles and you realize you only have whole ones?
mini food processor attachment for our immersion blender to the rescue!
the chiles were closer to a puree than diced, but i actually liked that better.
i think it made dinner spicier because the chiles were distributed throughout the dish more than in individual pieces.
