delicious dinner

one of my main food fears (aka: foods i find intimidating to make) is risotto.

when i saw emily post this recipe for asparagus and mushroom quinoa risotto a couple weeks ago, i starred it, thinking that it might be a good jumping off point for me to conquer my fear of making “real” risotto!

i bought some veggies and finally decided that last night was the night!

i made a couple substitutions from emily’s original recipe.

i used broccoli instead of asparagus and substituted leeks for the onions (i had both from the garden and wanted to use them up! plus they’re fresher than what’s in the supermarket & local – win win!). i also used 3 cups of vegetable broth plus about one cup of water instead of the 4 cups emily suggested. this was only because i opened a box of broth last week and wanted to use it up and not open another… also, i used real butter instead of earth balance (because i don’t have any earth balance…).

first i chopped veggies…

sauteed mushrooms and leeks…

added the quinoa…

and broth….

and stirred. added more broth. stirred. added more broth.

i was surprised how easy this was!

i was always scared of risotto because i thought it was hard. apparently, it’s not hard. just time consuming.

maybe you guys will see “real” risotto on here sooner than i thought!

i really liked this recipe and i’m sure i’ll make it (or another variation) again. plus, it’s awesome because i have leftovers for at least two packed lunches.

that’s my kind of recipe!

    I love making risotto, its a good dish when you are entertaining since you just need to stir. I have everything prepped and then do the cooking as guests mingle in the kitchen. My all time favorite risotto:

    Looks good! Risotto is one of my food fears too 😉 I bought some frozen butternut squash risotto at TJ’s yesterday which I’m super pumped to try! Minimal work for me there though…

  3. Risotto requires some patience as you slowly stir the broth in, and keep testing the arborio rice to see if it’s ready…but I love it and think it’s definitely worth it.

    Portabella mushroom risotto is one of our favorite recipes…I make half without mushrooms for me 🙂
