yesterday was september 27, which means it marked one month of marriage for brad and me. we’re just an old married couple now!
what did i eat on my one month anniversary?

i started off my morning with a cup of coffee (with pumpkin syrup stirred in).
and tons of fresh produce…
in the form of juice! this time it had grapes, apple, carrot, celery, cucumber, and ginger root.
i am loving this juice thing!
breakfast was my oats from my drive on saturday.
i could only eat half of them on saturday, so i just put the jar in the fridge when i got home and reheated it with almond milk and plenty more very cherry berry blend. it was just as good a couple days later!
i was so so so snacky all afternoon! at some point i…
drank a kombucha,
ate a snack of cottage cheese + baby yellow tomatoes,
crackers and what bean and basil hummus,
and lots and lots of pickles.
i think all of that added together can equal my lunch. sound good?
we went out to dinner to celebrate our anniversary! brad didn’t get out of work til a bit late, so we just chose a place near our apartment that we had heard was very cheap and had decent food: the timbers. unfortunately, the only offerings were deep fried foods and it was super dark in there.
so we ate this instead!
i found this recipe in a whole living magazine recently. it was in a feature about using abundant end of season foods like tomatoes, potatoes, and zucchinis – all of which i do have an abundance of!
you just slice tomatoes, potatoes, and zucchini (and/or yellow squash) top it with a bit of shredded parmesan and some herbs and bake.
with fresh beans and sweet potato fries on the side.
it was simple and quick to throw together in a pinch.

our dating anniversary is so close to our wedding anniversary – august 5 & 27, that i doubt we’ll really celebrate our dating anniversary anymore.
