brad’s day: avocado massaged kale salad

yesterday was absolutely brad’s day! i just wanted to make his first day of work special since he has worked so hard to get to this point. i left him a note to find before work in his car letting him know how proud i am of him.

of course, food is an essential way to my man’s heart, so i made him a delicious breakfast sandwich on a toasted english muffin with a fried egg, fried ham, cheese, and spinach.

and of course, i had my own breakfast – oats as always!


brad has a 2-hour break from noon-2 so he came home and was on his own for lunch. so he made a frozen pizza. womp womp…. oh well.


i came home from the garden with a huge bag of goodies!

i got to take home a bunch of kale, 5 eggplants, a white cucumber, a bunch of carrots, a gigantic cabbage, and some speared potatoes that need to be eaten asap!

this is why i love doing my program at the garden!!


part of the dinner for brad’s day is this fabulous kale salad!

one of liz’s friends brought it to her potluck a couple weeks ago, and brad loved it, so i knew it’d be perfect for dinner last night!

so what’s in it?

  • huge bunch of curly kale
  • medium sized red onion
  • 2 avocados
  • juice of one lemon
  • clove of garlic, minced
  • 2-3 tbsp olive oil
  • salt & pepper

how do i do it?

  • wash kale and rip up into bite sized pieces
  • dice onion and add to salad
  • mix up dressing: lemon juice, olive oil, and garlic
  • pour dressing over salad and add avocado to the bowl
  • get your hands dirty! massage dressing and avocado into kale. seriously, massage it a lot!
  • add salt & peppa
  • try not to shove your face in it as you devour it!

this salad is really delicious! the dressing and avocado really take the bite out of the kale and of course the great flavors of the avocado & lemon are both there.

this made a huge bowl of salad and it was all gone by the end of dinner!


dinner was completed by an awesome grilled cheese + zucchini sandwich!

we used an herbed ciabatta from the farmers’ market on saturday and added morel mushroom cheese (also from the farmers’ market) and grilled zucchini and onions. liz was in charge of this half of dinner and it was pretty awesome!

we had this meal waiting for brad when he got home from work, and i know he loved it! guess what? i totally loved it too! 🙂 it was so fun making special meals that i knew brad would love and making his first day of work a little special.


if it was the “day of you” what would you eat?

in the day of sarah, i’d start my morning off with an awesome bowl of hot oats and a skinny hazelnut latte (half of that happens every day! 🙂 ). lunch would be a grilled vegetable sandwich from jilly’s in st. louis. i love that sandwich & i think it would be included in “my” day!

dinner would definitely be a night out to eat – maybe indian food? i do love a good indian meal! 🙂 it’s so hard for me to choose my favorite foods – i love so many of them!
