wiaw – mixing it up

hooray for another what i ate wednesday! 🙂

guys, seriously, if you’re not participating in what i ate wednesdays yet, what are you waiting for!? get on that.


i’ve mentioned before that i tend to get into breakfast ruts and end up showing you oats, oats, and more oats! (what can i say…i love them!).

well, today is a little different….

i finally bought some buckwheat groats when i did my grocery shopping on monday.

then i headed over to ashley’s blog to learn her ways.

i made her chocolate banana muffin cake! i followed her recipe except that i added a tbsp of ground flax instead of the chia seeds.

i topped it with cashew butter, which got all melty (yum), some strawberry rhubarb jam that i made last year and am still eating up (apparently i’m not a jam person?), and some coconut flakes!

the verdict? i will be making this again!

it ended up being super easy because i mixed up the ingredients on monday night, then on tuesday morning, all i had to do was spray the bowl and pop in the microwave for 1 min 45 seconds! so convenient!


lunch was a simple packed up salad.

it had spinach, tomatoes, green peppers, mushrooms, black olives (leftover from omelettes on monday night), and was topped with cottage cheese “dressing”.

and a blueberry chobani.

this didn’t hold me over all that well, so i ended up snacking on some dark chocolate covered espresso beans and pretzels around 4pm.


dinner was an old favorite. veggie mac & cheese!

our veggies of choice this time were yellow squash, zucchini, green peppers, and onions. we also cooked a spaghetti squash and ate some of those “noodles” with our regular elbow macaroni too. it was a tasty change!


i guess i was feeling adventurous yesterday because i tried another new to me treat…. banana soft serve!

i know this has been around forever but i never tried it since i was food processor-less until a couple weeks ago! i froze some bananas monday.

tossed them in the food processor yesterday.

processed for about 5 minutes (i scraped down the sides twice).

and then delighted in my soft serve topped with chocolate “sauce” (1/2 tbsp honey, 1/2 tbsp agave/maple from trader joe’s, and 1 tbsp cocoa powder), granola crumbles, and coconut flakes!

brad and i both really enjoyed this once we got over the super strong banana flavor! i’ll be making this again too! 🙂


whew! i know i was a little long winded today, but i hoped you enjoyed my more adventurous meals this week! 🙂

    That looks amazing and I’ll def have to try the cake. Have you tried the fitnessista’s breakfast cookie yet?

      i haven’t tried her breakfast cookie yet, but it’s definitely on my list! i think that’s one of them that i’ll like when i get back to my normal work routine in september and i eat in the lab again every day.

  3. I love Ashley’s buckwheat bakes! Have you tried banana softserve with other frozen fruit? I like to add some frozen mango or frozen cherries. Have you made kale chips yet? I’m contemplating buying a dehydrater to make it easier. I love them that much! haha

      oh such a good idea! i’m totally adding blueberries next time i make banana soft serve!

      i have made kale chips – but i always use the oven! i actually picked some fresh kale today at the garden and am making them tonight! 🙂

    love seeing your eats! I love banana soft serve…I often make it with a bit of mint extract, a few chocolate chips, and then freeze it between 2 chocolate graham crackers… mmm mint chocolate chip ice cream sandwich!

    Have you made socca yet? That is one trend I’ve seen a lot lately, and it’s really delicious too!

  5. ooh those bakes always look so awesome! and why does chobani not make a probiotic cottage cheese? they should really get on that! Just realized that they should. haha

  8. Ahhh banana soft serve is like the only thing that keeps me from going to the fro-yo place like every night, hahaha. I love that it’s like a natural kind of ice cream! I like to add cocoa to it and make it chocolately!
