photo project and wiaw redo

wow, i wish yesterday’s meals actually happened on tuesday. it would have made for a much better what i ate wednesday yesterday! 🙂

so to make it up to you, here’s what i actually ate on wednesday!

breakfast was no change. my oats made with a whole banana this time (extra sweetness!) and topped with frozen blueberries, pineapple, and cottage cheese. yum. it was also enjoyed with coffee of course!

lunch was a hodge-podge of thrown together things.

i had a hard boiled egg, an apple, a chobani, and half of a portobello mushroom enchilada!

and finally, dinner is where it was at yesterday.

we used up some carrots that were on their last day by making carrot fries. just cut up carrots into fry-sized pieces and bake at 400* for about 25 minutes. we sprayed the pan, then sprayed the carrots and sprinkled 21 seasoning salute on them.

i also made an asian-inspired bok choi dish. i boiled bok choi (cut into bite-sized pieces) until tender but still crunchy, and then sauteed it in butter and soy sauce with garlic, onions, and mushrooms. we garnished with cilantro and gobbled it up!

and to round out the meal, we sliced french bread, topped it with a little olive oil and a thick slather of pesto. then we added a couple basil leaves, a slice of tomato, and a slice of mozzarella. we baked it for about 5 minutes at 400* and then broiled it for another 1-2 to get it crisped up!

seriously, this was awesome! 🙂 go make it now!

i also wanted to share a very fun collection of photos with you! yesterday at the garden, we did a photo project with the kids. we gave them cameras and asked them to take photos of things from the garden they liked, disliked, thought was beautiful, etc. here’s a collection of some of the photos.

they painted the signs that are photographed in a lot of the pictures as an activity last week. i love the pictures! some of the kids did a really great job.

i also wanted to share with you some new-to-me products that i’ve been trying recently!

i got some tahini the other day. making my own hummus is on my 101 in 1001 list, so now i will be able to tackle that one! it’s on my plan for next week. 🙂

i also found some packets of justin’s peanut and almond butter at a health food store in chicago. i was so excited that i snapped them up immediately! i haven’t tried them yet, but i can’t wait!

and finally, plenty of coconut oil for making nut butters! i can’t wait to make my own peanut/almond/cashew butter! 🙂

oh yeah, and some maranatha almond butter. i’ve never tried maranatha nut butters but i’ve seen them all over blog land. and this stuff is special because i got it at my first ever trip to costco!!  my sister has a costco card, so i borrowed it the other day and made an epic trip. i need to go back soon though. i was so overwhelmed that i only saw about a quarter of the store! 😦

  3. I love the photos all the kiddos took–so cute!

    Ironically I just bought tahini for the first time myself last week. I made regular hummus (with chickpeas and garlic) and have some edamame waiting for me at home to make some edamame hummus 🙂

  7. Uh oh – you’ve popped your Costco cherry! Watch out – you can spend serious money in that store. I love it! Great prices on produce, nuts and frozen veggies and fruits. Have fun (and save up)…. 😉
