it’s april!

seriously, mother nature. it is april. not only that, it is the middle of april. what’s with this weather?

i had to wear my winter coat today, and i am clearly not happy about it! brrr. i’m ready for sundresses and flip-flops! who’s with me?

*sigh* besides the crappiness that is the weather right now, today was actually a pretty good day! i recruited a couple subjects for my research study & got a couple projects off the ground at work. woohoo!

i know i teased you all with this recipe yesterday. brad’s mom brought this cheesy cauliflower soup on saturday so we all had something to eat after moving and i got to keep the leftovers! 🙂

disclaimer: this soup is not low-fat, low-cal, or very weight loss friendly. but it is comfort food at it’s finest (well, not comfort food’s absolute finest – that’s grilled cheese or mac & cheese! but it is delicious).

i haven’t made myself it yet, but i have eaten it twice and loved it enough that i got the recipe from brad’s mom!

cheesey cauliflower soup*

ingredients

  • 4 cups chicken broth
  • 4 chicken bouillon cubes
  •  16oz frozen cauliflower, or 16 oz fresh cauliflower
  • 2-3 pealed and diced potatoes
  • 1 stick butter
  • 1/2 cup flour
  • 1 pint half & half
  • 1.5 cups shredded cheddar cheese

method
put first 4 ingredients into a large pot, simmer until veggies are soft.
in separate pan, melt 1 stick of butter, add 1/2 cup of flour. stir. slowly add in 1 pint of half and half. stir until mixture is smooth.
slowly add creamy mixture into kettle with the broth and veggies. add 1-1.5 cups of shredded cheddar cheese. let simmer and thicken!

the soup is easy to customize! i would definitely add more vegetables and add different kinds (broccoli would be amazing). you could also add in some shredded chicken for a protein boost… however you like it, i recommend saving it for a cold rainy day (like today!). it will warm your soul.

*this is exactly as i received the recipe from brad’s mom – i haven’t made the soup myself, but if i did, i’d experiment with more veggies, less butter, and perhaps less half & half and sub in some skim milk. also, using reduced fat cheddar and less of it would help cut down on those calories too!

monday mini’s

also, it’s monday, so that means monday mini goals! first, let’s see how i did on last week’s goals…

♦ complete week 4 of the one hundred pushups program for the pipes challenge. yes! i did it! it was rough…

♦ maintain calm and positive attitude during move to new apartment – no stressing! ← success! i’m very proud of myself for not getting overwhelmed and instead just having fun decorating and unpacking our amazing new apartment!

♦ do not hit the snooze button at all. ← i did ok on this one. i definitely hit the snooze button, but much less than usual! i averaged 10 minutes of snoozing per day, compared to 45 minutes in previous weeks!

♦ complete lab to-do list← it’s finished! i might have just finished it today, but it’s done! 🙂

next week’s goals:

 don’t go overboard on food this weekend. it’s brad’s graduation weekend and i know there will be an abundance of eating out and drinks. it’s my goal to enjoy myself, but never feel stuffed. let’s see if i can do it!

♥ complete week 5 of the pipes challenge. i bet you guys all saw this one coming! 🙂 only 2 weeks left of this challenge – crazy!

♥ go to the gym 2 times this week. seriously, i need to get out of my lazy rut. i haven’t been working out regularly at all. i need to get my booty in gear!

♥ savor the moments. brad’s graduation and his move to madison is something that i have been anticipating for the entire 31 months that we have been dating long-distance. i just want to enjoy this time and relish in the fact that it’s finally here!

i think those goals are perfect for my week ahead! 🙂

    My family lives in Michigan (where I’m from) and they were whining about getting snow up there today too! I feel your pain. Luckily we missed out on the fun down in Indy.

    We are having spring in Dallas – come visit. 🙂 Glad you had a great day at work and good job with your goals! I’m working on increasing my pushups, too. No specific challenge, but maybe I should. Yoga and CrossFit are helping.

      i really want to get more into yoga. i feel like such a beginner at it, and i hate that feeling! but obviously, i have to start somewhere, right?!

  7. Uh – we let the kids run through the water hose spray tonight. San Antonio is nice and toasty. Too bad it will feel like the face of the sun any day now and then stay that way for 4 months.

    I am running a 5k this weekend, my first in, oh, 10 years. Eek. I’m excited and nervous.

  8. Weather here in St. Louis has been better than Michigan but we have severe weather headed our way tomorrow–here’s hoping we don’t see any tornadoes like the rest of the country did!

  9. No spring here! We’ve had teaser springs (nice weather for a few days) and then a cold front comes in. Hopefully nice weather will stick next time!

    Good luck with the gym! The hardest thing is always getting out the door.

      it was 80 in madison 2 weekends ago! talk about a teaser…. now snow this morning. not cool!

      i agree – getting out the door is way harder for me that actually doing the workouts!

  10. So sorry it’s so cold there! I’m in Tucson, AZ & it’s already almost 100 degrees here! Yikes! I wish it were Spring, it already feels like Summer!!!

  12. I’m loving Cauli these days!! I’d probably swap out the chicken stock for veg. stock, and make it vegetarian 😉 But still, I bet it would be super yummy!

      i would make it with veg stock too – i hardly ever use chicken broth! i’m sure it’d still be delicious! with all that cheese, i don’t know how it wouldn’t be!
