winding down from the weekend

this was kind of a big weekend. definitely bigger than i was expecting it to be! πŸ™‚ i was prepared to spend lots of time with brad and to sign our lease for our new apartment.

i was not expecting such great news from brad’s job interview (no offer yet, but this are definitely moving in the right direction), not expecting to choose a new kitchen table (!!), and not expecting to be such a lazy bum and eat out for almost every single meal.

today is going to be spent cleaning my apartment, getting in a good sweat (i didn’t do the 30 day shred for the last 2 days either…boo.), eating fruit and veggie-heavy meals that i prepare myself, and making some progress on my research proposal sine i didn’t work on that most of the weekend either.


here’s a quick recap of the two meals brad and i did eat at home this weekend.

friday night was the second homemade pizza with trader joe’s dough that i was saving for brad!

it was on garlic and herb dough with my mom’s spaghetti sauce, cheese, diced bell peppers, red onion, mushrooms, black olives, and spinach. it was tasty of course! it’s pretty hard to mess up pizza… πŸ˜‰


and then this morning we whipped up an epic omelette! it had bell peppers, mushrooms, red onion, spinach, and avocado! oh, and cheese of course.

topped with my mom’s homemade salsa!

i was happy to start today with two big old servings of veggies.


ok, time to get busy! have a great sunday!

were you productive this weekend?

i had a great time, but i did NOT get much done…. i’m definitely paying for it today!

  3. Home-made pizza is the best! it’s so fun to get creative & throw on all your favorite veggies. I had Glass Nickel pizza instead of making my own, Glass Nickel rocks!
    Hope you get productive soon!

      ahh, i was supposed to go out to lunch with friends on saturday, but they were going to glass nickel and i really didn’t think i needed pizza for a THIRD time last week, so i passed.

      i looooove their feta-licious and south of the border pizzas!

      haha, at least i can say that! πŸ™‚ and sadly, yesterday was NOT more productive than the rest of the weekend for me. but i totally turned that around today – thank goodness! πŸ™‚
