i think day 2 of the vegan for a week challenge was easier than day 1. i didn’t miss my cheese as much yesterday! that could be because i LOVED my meals though.
breakfast was hot oats! i made it this morning, then brought it to work topped with blueberries and coconut butter. 🙂 in my excitement to have hot oats, i forgot to take a picture – oops! in my oats:
- 1/4 cup rolled oats
- 1 small banana
- 1 T each of oat bran, ground flax, chia seeds, and raisins
- 1/3 cup water and almond milk
i also had some lemon water while getting ready.
lunch was a repeat of last night’s stir fry with peanut sauce! i brought it in a reusable container, warmed it up, and put it in a wrap with some mixed greens and a bit of sriracha for spice! it was great in wrap form. i might have even liked it better this way!
then i wanted more hummus, so i grabbed another delivery method for it:
the yummy artisan bread i got this weekend. it has the happy little vegan symbol too! 🙂
since i snacked so much in the afternoon, i wasn’t very hungry for dinner. i was all ready to make the succotash that i had on my meal plan – i even had all of the ingredients sitting out!
but i knew i wouldn’t eat much of it, so i just stuck with a big bowl of roasted vegetables.
i roasted these yesterday. in the mix was: carrots, bell peppers, onion slices, and mushrooms.
it was soooooo good! i just roasted them with 21 seasoning salute and then put a little sprinkle of garlic gold nuggets on the top before i ate it. perfect!
i am attending a conference on the metabolic syndrome in milwaukee today – i had to leave my house at 6am so i made it on time! i ate my green monster smoothie in a bowl before i left my apartment.
it had spinach, banana, chocolate almond milk, and frozen blueberries. then i topped it with coconut butter and granola. i enjoyed it with a little lemon water and my vitamins, of course.
i’m not sure what to expect with the meal that will be provided at the conference today, so i made a little bag of snacks that i could eat today in a pinch.
i brought 2 choices of mini larabar flavors, garlic hummus with veggies (celery, carrots, grape tomatoes), and a little sandwich on that yummy bread. the sandwich has white bean hummus and a couple sun dried tomatoes – easy peasy! i’m assuming we’ll get some kind of fruit or vegetables with the lunch they provide today. this is my first time during this vegan week that i won’t be in the situation to prepare my own food. i think i prepared well! 🙂
whew, lots of food again today. i’ll try to find something interesting other than my food to write about tomorrow!
