vegan: take 2

i think day 2 of the vegan for a week challenge was easier than day 1. i didn’t miss my cheese as much yesterday! that could be because i LOVED my meals though.

breakfast was hot oats! i made it this morning, then brought it to work topped with blueberries and coconut butter. πŸ™‚ in my excitement to have hot oats, i forgot to take a picture – oops! in my oats:

  • 1/4 cup rolled oats
  • 1 small banana
  • 1 T each of oat bran, ground flax, chia seeds, and raisins
  • 1/3 cup water and almond milk

i also had some lemon water while getting ready.

lunch was a repeat of last night’s stir fry with peanut sauce! i brought it in a reusable container, warmed it up, and put it in a wrap with some mixed greens and a bit of sriracha for spice! it was great in wrap form. i might have even liked it better this way!

i was snacky this afternoon. i had celery and garlic hummus when i got home. love this trader joe’s hummus! and it tells me it’s vegan right there! πŸ™‚

then i wanted more hummus, so i grabbed another delivery method for it:

the yummy artisan bread i got this weekend. it has the happy little vegan symbol too! πŸ™‚

since i snacked so much in the afternoon, i wasn’t very hungry for dinner. i was all ready to make the succotash that i had on my meal plan – i even had all of the ingredients sitting out!

but i knew i wouldn’t eat much of it, so i just stuck with a big bowl of roasted vegetables.

i roasted these yesterday. in the mix was: carrots, bell peppers, onion slices, and mushrooms.

it was soooooo good! i just roasted them with 21 seasoning salute and then put a little sprinkle of garlic gold nuggets on the top before i ate it. perfect!

i am attending a conference on the metabolic syndrome in milwaukee today – i had to leave my house at 6am so i made it on time! i ate my green monster smoothie in a bowl before i left my apartment.

it had spinach, banana, chocolate almond milk, and frozen blueberries. then i topped it with coconut butter and granola. i enjoyed it with a little lemon water and my vitamins, of course.

i’m not sure what to expect with the meal that will be provided at the conference today, so i made a little bag of snacks that i could eat today in a pinch.

i brought 2 choices of mini larabar flavors, garlic hummus with veggies (celery, carrots, grape tomatoes), and a little sandwich on that yummy bread. the sandwich has white bean hummus and a couple sun dried tomatoes – easy peasy! i’m assuming we’ll get some kind of fruit or vegetables with the lunch they provide today. this is my first time during this vegan week that i won’t be in the situation to prepare my own food. i think i prepared well! πŸ™‚

whew, lots of food again today. i’ll try to find something interesting other than my food to write about tomorrow!

  1. good job packing your snacks! hope your conference is interesting. how about you write about the most interesting thing you’ve talked about in school recently. I went to a presentation by a renal dietitian last night and loved it. we also started the renal chapter in my med nutrition therapy class today. it’s so interesting to hear about how different foods affect the way your kidneys function!

      very cool lindsay. thanks for the great blog topic idea! i really wish i had read that before i posted this morning. πŸ™‚ i’ll write about that tomorrow because we are talking about something VERY interesting in one of my classes!

  2. I honestly love seeing your vegan eats. A lot of strictly vegan blogs feature fancy and intense recipes. I’m not saying yours aren’t fancy! But it’s nice to see normal vegan snack options. I’m loving this!

      trust me, i’m not offended that you don’t think my snacks aren’t fancy. they’re not! πŸ™‚ i’m not really into super fancy foods most of the time. i like “normal” whole foods, so that’s what i’ll eat even if i’m doing a vegan challenge!

  4. Your meals for this challenge look so delicious. I think I would be relying on that little symbol. LOL

    And garlic hummus = exceptional. Have you ever tried TJs white bean basil hummus. It is the BEST!

      i don’t think i’ve tried their white bean basil hummus. the one that i have now is the only white bean hummus i’ve had. i’m sure it would be delicious, though. i love basil!

  7. I miss Trader Joes! I would love to see your thoughts on acidity/alkalinity of the body. I keep reading bits of it through different books and blogs and would love to hear your take on the subject.

      thanks for the topic suggestion, michelle! i unfortunately don’t know much about acidity/alkalinity in the body. i know some people are all about eating certain balance of acidic vs. alkaline foods, but i’ve never looked into it and i haven’t had any classes on that. if i do any research on it in the future, i’ll definitely post about it.

    Love all your vegan eats. I am really surprised that as healthy living bloggers we tend to incorporate so many vegan foods in our diet, unintentionally. Great job on going vegan for a week! Your dinner looks great!

      thanks priyanka! i was surprised that at least the base of many of my meals is vegan. i like to throw cheese in everything though, so i un-veganize a lot of things that way! πŸ™‚
