good intentions

i had such a good start working at starbucks yesterday morning! i got a lot accomplished on my paper revisions and enjoyed a delicious skinny hazelnut latte. πŸ™‚

so, at lunchtime, i left starbucks, went to the gym to get in my workout in. i spent a tough and sweaty half hour on the elliptical, then i moved on to the treadmill. i warmed up for 5 minutes at a walk, did more pyramid intervals, and walked for a minute to cool down. i knocked off 2.5 more miles from my goal of 500. 495.5 miles to go this year! i did a little quick math after my workout and realized that i need to do 9.5 miles per week to accomplish my goal. well, tomorrow is the last day of week #1 and i only have 4.5 miles done. i already have to pay catch up! oops! i can do it though!

i made a delicious salad (the same as i had wednesday night for dinner) and made a quick open faced sandwich with edamame hummus and a fried egg to try to get in a little protein. IT WAS SO GOOD! πŸ™‚ it was pretty ugly though, so no photo.

after lunch, i sat down at my desk in my apartment to continue my awesome work momentum! and, once again, i didn’t buckle down. i distracted myself with e-mails, making weekend plans, and blogs.

but, i think i stumbled across a gem of a time-management strategy! sarah is having a similar problem as me with such a free schedule. someone commented on her blog that there’s a great technique for time management called the pomodoro technique. i am going to try it today! i’ll let you know how it goes.

last night, i whipped up another batch of beer dip. what can i say? i love that stuff! πŸ™‚ i’m having the girls over tonight for a game night, and this dip is best if it sits overnight, so i ran to the store to get the fixings and got to work.

i used this recipe from allrecipes.com. the trick to the recipe: you really do need to use a good beer.

old scratch – amber lager was a GREAT choice! plus, the recipe only calls for 1/3 of a cup (ok, i added about 1/2 cup). but there’s a lot more beer in a bottle than a 1/2 cup….i i got to enjoy it! πŸ™‚

while enjoying the beer, i simply mixed up all of the ingredients.

then i had a quick taste test with some mini pretzels that i had left from a flight back in october. i’m glad i saved them because this dip is gooooood! πŸ™‚

breakfast this morning is the usual. overnight oats! i’m liking this blog. because i knew i wanted to post my oats, i changed up my toppings today! yay…keeping things interesting.

today’s toppings:

  • coconut
  • strawberries
  • granola
  • almond butter

yum! πŸ™‚

ok, i’m off to try theΒ pomodoro technique. wish me luck! πŸ™‚
