superbowl, here we come! (+ veggie mac recipe)

no, i’m sadly not GOING to the superbowl, but my packers are!! 🙂

first of all, thank you so much for the birthday wishes and your help on choosing a wedding look for our groomsmen.

brad and i had our packer jerseys on to represent our team (i had my game face on too) while we watched the packers take on the bears in the nfc championship game yesterday.

the packers and the bears are huge rivals and this is only the second time EVER that we have played each other in the playoffs (the bears won the first time 41 years ago). brad and i cuddled up on his couch to watch the game.

it was so nerve-wracking. it involved lots of yelling at the tv and some choice words. when we won brad was so excited and jumping around that capone got really excited and jumped up and down too!

i know i already ruined the punchline, but the packers won and they’re going to the superbowl! i’m so pumped.

brad and i was STARVING after getting ourselves all worked up for 3 hours, so we ran to the store for ingredients for one of our favorite meals to make together: mac and cheese with roasted veggies!

first, we prepped the veggies. we had red onion, green pepper, zucchini, and yellow squash.

we took turns chopping.

then we sprayed a baking sheet with cooking spray, put the veggies on the pan in a single layer, sprayed with cooking spray again, and sprinkled a little lawry’s seasoning salt on top.

they were roasted at 375* for 30 minutes and flipped halfway though.

all roasted up!

while the vegetables were in the oven, i boiled some water for the elbow macaroni and got to work on the cheese sauce.

we always use a really basic sauce recipe that brad’s mom & grandma make all the time. it’s not healthy at all, but it’s tasty and if you put it on vegetables, then it’s healthy, right?

cheese sauce:

  • 3 T butter
  • 3 T ap flour
  • 1.5 cups milk*
  • 1.5 cups shredded cheese*

*i used skim milk and reduced fat cheese to cut down on the calories a bit. it’s still delicious, don’t worry!

melt the butter in the microwave. then mix in the flour until it is a thick paste. then slowly add in the milk, whisking it into the paste (don’t worry if there are chunks in the sauce at this point, they’ll go away). microwave for approximately 5 minutes, whisking vigorously every minute or two. make sure you watch the sauce while it’s in the microwave – it can overflow and it’s quite messy.

after the sauce reaches a thick consistency, stir in the cheese. you can use as much or as little as you want for this. also, it’s fun to mix it up with interesting cheeses. i’ve used pepperjack, spicy cheddar, veggie cheddar, and so many more.

then toss it all in a bowl and enjoy!

i put a big handful of spinach at the bottom of my bowl, then a large serving of vegetables.

and finally macaroni with cheese on top.

it was enjoyed with some coconut water.

my first time trying coconut water – i liked it! 🙂

after dinner, brad and i snuggled on the couch. i caught up on blogs from the weekend and he played call of duty on his ps3 (yes, my fiance is a video game dork).

today i’ve got a morning of work at brad’s school, an adjustment at his school clinic, and then the long 6-hour drive back to madison.

  2. That veggie mac and cheese sounds great and oh so easy! I’m for sure going to have to try it! I don’t watch any sport really but my boyfriend is a video game dork, too! Now less than ever…luckily but he still has his phases.

      ahh, those video games. i’m crossing my fingers that once my fiance and i move in together he’ll cut down on the gaming. he plays EVERY NIGHT!

  3. Save travels today!! Hopefully you don’t drive into any bad weather. I too love coconut water! I like to drink it before my runs to help prevent muscle cramps. Oh and GO PACKERS!!! I’m so excited for the Superbowl!

      my drive back today was MUCH better than last weekend! thank goodness! i know lots of people use coconut water to hydrate for runs so i felt a little funny drinking it while i was watching tv and eating dinner, but oh well. it was tasty!! 🙂
